Brown rice Waldorf salad
An easy to assemble, cold, crispy and chunky summer salad.
Ingredients
- 500 ml (2 cups) cooked Spekko Saman Brown Rice
- 375 ml (1 ½ cups) smoked chicken breasts, chopped
- 2 red apples, sliced
- 2 green apples, chopped into cubes
- 3 celery stalks, diced
- 30 ml (2 tbsp) chopped parsley
- lettuce leaves
- 90 ml (6 tbsp) Bulgarian yogurt
- 2,5 ml (½ tsp) dried mixed herbs
- 15 ml (1 tbsp) chopped fresh mint
- salt and ground black pepper to taste
Dressing
Method
- Combine dressing ingredients in a small bowl and place in fridge to cool.
- Mix rice, smoked chicken, apples and celery in a large bowl.
- Arrange lettuce leaves and spoon in the rice mixture.
- Drizzle over the chilled dressing.
- Garnish with chopped parsley.
