White Chocolate and Caramel Rice Pudding Cakes

3 Tbsp cornflour
300 ml cream
2 eggs, lightly beaten
1 tsp vanilla essence
Pinch of salt
2 cups cooked Spekko Saman White Rice
1⁄4 cup caster sugar
200 g caramel chocolate chips
Thick cream to serve
Preheat the oven to 180 ◦C and grease a 12-hole muffin pan. Line each hole with a circle of baking paper.
Mix the cornflour, cream, eggs, vanilla essence and salt. Add the rice, sugar and chocolate chips.
Pour into the muffin pan and bake for about 20 minutes until golden and set.
Serve with cream.
