Sweet masala and butternut and rice fritters
Whip up these heavenly masala and butternut fritters as a spicy teatime treat or dessert.
Ingredients
- 125 ml (½ cup) flour, sifted
- ¼ cup cooked Spekko Saman White Rice
- 5 ml (1 tsp) baking powder
- 500 ml (2 cups) cooked and mashed butternut
- 5ml (1 tsp) mixed mild masala
- 2 large eggs, whisked
- 15 ml (1 tbsp) castor sugar
- 1/4 tsp ground nutmeg
- 5 ml (1 tsp) cinnamon powder
- ¼ cup castor sugar
- oil for frying
- lemon slices
Method
- Mix together the sifted flour, rice, baking powder, mashed butternut and mild masala.
- Beat in the eggs to form a smooth thick batter.
- Add the castor sugar and ground nutmeg
- Stir well until the castor sugar is dissolved into the batter mixture.
- Allow to rest for 15 minutes.
- Heat oil in a non-stick frying pan.
- Fry spoonfuls of the batter until golden brown.
- Remove and drain on a paper towel.
- Mix cinnamon powder with castor sugar.
- Dust fritters with cinnamon sugar.
- Serve hot with lemon slices.
