Seafood rice
Keep frozen seafood mix and peas in the deepfreeze - it is easy to cook this quick seafood one pan dish at the spur of the moment.
Ingredients
15 ml (1 tbsp) oil
1 leek or onion, chopped
5 ml (1 tsp) turmeric
375 ml (1½ cups) Spekko Long Grain Parboiled Rice
6 cups fish or chicken stock
250 ml (1 cup) frozen peas
400 g frozen seafood mix, defrosted
salt and pepper to taste
lemon wedges to serve
Method
1.Heat the oil in a large pot and softer the leek or onion for 5 minutes.
2.Stir in the turmeric and rice. Make sure all the kernels are coated with the oil.
3.Pour in the stock and bring to the boil. Lower the heat and simmer until the rice is just about cooked.
4.Add the peas and the seafood and mix through. Cook until the rice and seafood is cooked.

Keep the fish frozen and cook just before serving.
