Saucy and spicy calamari on spinach rice
This is a spicy calamari dish is quick and easy to make.
Ingredients
- 30 ml (2 tbsp) olive oil
- 1 large onion, chopped
- 2 clove garlic, crushed
- 2,5 ml (½ tsp) ground coriander
- 10 ml (2 tsp) paprika
- 300 g frozen calamari rings, thawed
- 125 ml (½ cup) natural yoghurt (or maas)
- 85 ml (1/3 cup) cream
- 5 ml (1tsp) cayenne pepper
- Salt and pepper to taste
- ½ bunch spinach, finely chopped
- 30 ml (2tbsp) butter
- 500 ml (2 cups) cooked Spekko Saman White Rice
- Salt and lemon pepper
- Shaved Parmesan cheese to garnish
Spinach rice
Method
- Heat oil in a frying pan and fry the onion and garlic until soft.
- Add coriander, paprika and calamari, Stir-fry for 1 minute.
- Remove from heat and stir in yoghurt, cream and cayenne pepper. Season to taste.
- Return to heat, simmer for 1 minute.
- To serve; spoon over spinach rice. If sauce is too dry add a little yoghurt or cream. Garnish with Parmesan shavings.
- For the Spinach Rice: saute spinach in melted butter until wilted. Add cooked Spekko Rice, toss lightly to mix through. Season with salt and lemon pepper.
- Replace the frozen calamari with frozen fish of your choice.
- Use any Spekko Rice variant in this dish.
