Risi E Bisi with Pancetta and Parma Ham

2 Tbsp olive oil
3 shallots, chopped
2 garlic cloves, crushed
¼ cup chopped pancetta
1 cup Spekko Long Grain White Rice
5 – 6 cups hot chicken stock
1 cup frozen peas
3 Tbsp grated Parmesan cheese
4 Parma ham slices
Salt and black pepper to taste
Grated lemon zest
Olive oil
Fresh basil

  1. Heat the oil in a risotto pot over a medium heat, then fry the shallots until soft. Add the pancetta and fry until crispy. Add the garlic and cook until just fragrant.

  2. Stir in the rice, coating the rice with the oil.

  3. Ladle in the hot chicken stock, a little at a time, only adding more when the stock has been absorbed. When the rice is almost cooked, add all the remaining stock and the frozen peas, then simmer for 2 minutes (the dish should be quite soupy. Add more stock if needed).

  4. Stir in the Parmesan cheese, then season.

  5. Fry the Parma ham slices until crisp, then snap into shards.

  6. Ladle the risi e bisi into bowls, then top with the ham, a little grated lemon zest, a glug of olive oil and fresh basil.
