Rice and Rocket Salad With Feta Cheese, Red Onions and Sundried Tomatoes
A quick tasty salad for a mom on the go. Add cooked chicken or cold roast beef to the salad to make a meal on its own.
Ingredients
1 Red onion
10 Sundried tomatoes
45ml (3 tbsp) Pine nuts
3 cups Cooked Spekko India Gate Basmati Rice
140g Fresh rocket leaves
150g Feta cheese
Salt to season
Dressing
30ml (2 tbsp) Lemon juice
15ml (1 tbsp) Honey
50ml Olive oil
1 Clove garlic, crushed
Salt to season
15ml (1 tbsp) Chopped coriander
Method
1. Combine the ingredients for the dressing and leave to infuse for 30 minutes. Check the seasoning and adjust if necessary.
2. Finely slice the red onion. Chop the sundried tomatoes. Toast the pine nuts in a non-stick frying pan until golden brown.
3. Place the rice in a salad bowl. Stir in the sundried tomatoes, red onion slices and pine nuts. Lightly toss in the rocket. Crumble the feta over the rice salad.
4. Season with salt and pour the dressing over the salad just before serving.
5. Sprinkle chopped coriander over the salad and serve at room temperature.
