Prince Albert Broccoli, Spinach Cheese Sauce Puree
This puree tastes like a baked vegetable cheese dish. But it\'s actually a smooth puree. Serve over rice, or as a side dish to roast meat.
Ingredients
2 large onions, chopped
30 ml (2 tbsp) butter
1 head of broccoli
200g baby spinach leaves
500ml (2 cups) room
15ml (1 tbsp) cake flour
30ml (2 tbsp) concentrated chicken stock extract
250ml (1 cup) grated Parmesan cheese
a handful of chopped, Italian parsley
Method
1.Heat a large pan and sauté the onion in butter until soft.
2.Add the broccoli and sauté until soft. Then add the spinach leaves and cook until just soft. Set aside.
3.Mix the cream, cake flour and chicken extract and then heat and simmer until thickened.
4.Mix the onion, broccoli and spinach with the white sauce, add the Parmesan cheese and parsley and mix in a food mixer until smooth. Add extra butter for smoothness.
5.Serve with roast lamb.
