250 ml (1 cup) Spekko Long Grain Parboiled Rice
30 ml (2 tbsp) butter
2 onions, chopped
2 celery stalks with leaves, finely chopped
2 cloves of garlic, crushed
1 red chilli, seeded and chopped
5-10 ml (1-2 tsp) peri-peri sauce
2,5 ml (½ tsp) cayenne pepper
500 g fresh chicken livers, cleaned
125 ml (½ cup) cream
salt and freshly ground black pepper to taste
1.Cook Spekko Long Grain Rice according to the instructions on the pack, drain and keep warm.
2.Melt butter in a heavy-based saucepan and fry add onions, celery with leaves and garlic until onions are translucent.
3.Add spices and chicken livers and fry until livers are almost cooked. This is a quick process, so take care not to overcook the livers.
4.Add cream and heat through. Season to taste and serve livers with rice and a green salad.

The same recipe can be used to prepare chicken breast fillets, thinly sliced or prawns, shelled and deveined.
