1 kg beef fillet, sliced into 4 – 6 portions
sea salt flakes to season
45 ml (3 tbsp) sunflower oil
2 Onions, thickly sliced
1 Green pepper, seeded and cut into strips
4 Cloves of garlic, crushed
4 Green chillies, seeded and chopped
25 ml (5 tsp) dark soy sauce
25 ml (5 tsp) light soy sauce
4 Heads of bok choy, outer leaves removed
100 ml fresh coriander to garnish
750 ml (3 cups) cooked Spekko Saman White Rice
1. Season fillet with salt and heat a little oil in a cast iron pan. Fry meat on all sides until rare to medium rare. Remove from heat, allow to rest for a few minutes, but keep warm.
2. Heat remaining oil in a wok and stir-fry onions until it almost tender. Add green pepper, garlic, chillies and soy sauces.
3. Add bok choy leaves and toss, taking care not to overcook it. Top fillet with vegetables and garnish with coriander. Serve with Spekko White Rice.
