Oven baked soya mince and brown rice spinach parcels
To prepare this oven- baked vegetarian meal, soya mince is used. Cook in less than 30 minutes.
Ingredients
- 15 ml (3 tbsp) olive oil
- 1 small onion, finely diced
- 3 red chillies, finely chopped
- 5 ml (1tsp) smoked paprika
- 5 ml (1 tsp) cumin powder
- ½ tsp turmeric
- 5 ml (1 tsp) thyme
- 5 ml (1 tsp) coriander
- 5 ml (1tsp) crushed ginger and garlic
- 250 g soya mince
- 3 plum tomatoes, diced
- 250 ml (1 cup) cooked Spekko Saman Brown Rice
- 1 bunch large spinach leaves
- 100 g butter
- 7,5 ml (1 ½ tsp) crushed garlic
- salt and pepper to taste
Method
- Preheat the oven to 180°C.
- Sauté onion, red chilli and pepper in olive oil until caramelised. Stir in spices and herbs along with ginger and garlic for 30 seconds,
- Add soya mince and allow to cook for a further 10 minutes. Add tomatoes and simmer for 30 minutes until cooked. Remove from heat and stir in cooked brown rice and season with salt and pepper.
- Remove stalks from spinach leaves, blanch for 1 minute to soften and drain off all excess water. Lay spinach leaf face down on a clean surface.
- Place 2 to 3 tablespoons of the mince filling in the centre of each leaf.
- Fold the sides of the leaf over the filling to form a parcel.
- Repeat with remaining leaves and filling.
- Place parcels loose side down in a deep casserole dish.
- Melt together butter and crushed garlic. Pour over the spinach parcels and bake for 20 minutes.
