Mixed Vegetable “Curry in a Hurry”
Make this curry in a hurry with frozen vegetables.
Ingredients
30ml (2 tbsp) Olive oil
1 Onion, Thinly diced
15ml (1 tbsp) Crushed garlic
30ml (2 tbsp) Tomato paste
15ml (1 tbsp) Turmeric
15ml (1 tbsp) Curry powder
10ml (2 tsp) Cayenne pepper
30ml (2 tbsp) Sugar
1 X 500g Pack frozen mixed vegetables, defrosted (cauliflower, carrots, peas, corn, beans)
250ml (1 cup) Cream
1/4 cup Chopped fresh coriander
30ml (2 tbsp) Chopped fresh parsley
4 cups Cooked Spekko Royal Umbrella Jamine Rice
Salt and pepper to taste
Method
1.Heat the oil in a pan and add the onions and garlic. Sauté until translucent.
2.Add the tomato paste and cook for a minute. Add the turmeric, curry powder, cayenne, and sugar stir until well mixed.
3.Add the vegetables and stir to combine. Season with salt and pepper to taste. Add the cream and bring to a boil. Bring down heat and simmer until cooked.
