Mixed mushroom palau
This dish is full of spices and reminiscent of a one-pot biryani.
Ingredients
500 ml (2 cups) Spekko India Gate Classic Basmati Rice
2 cinnamon sticks
1 star anise
2 cloves
2 elachi pods
1 sprig curry leaves
100 g butter
15 ml (1 tbsp) vegetable oil
1 large onion, halved and finely sliced
250 g brown mushrooms
250 g button mushrooms
5 ml (1 tsp) turmeric
5 ml (1 tsp) ginger powder
5 ml (1 tsp) garlic powder
5 ml (1 tsp) cumin
5 ml (1 tsp) ground coriander
5 ml (1 tsp) garam masala
2 green chillies, chopped
3 dried red chillies, chopped
125 ml (1/2 cup) yoghurt
3 potatoes, halved and par cooked
125 ml (1/2 cup) cooked brown lentils
salt to taste
Method
1.Cook rice according to the instructions on the packet.
2.Fry whole spices and curry leaves for a 1 minute in a tablespoon of butter with a tablespoon of vegetable oil.
3.Stir in mushrooms, half the turmeric, ground spices and chillies and allow mushrooms to cook down.
4.Add yoghurt and cook for further 10 minutes.
5.Rub potatoes with the rest of the turmeric and fry until crisp and cook through.
6.Fry remaining onions until crisp and golden.
7.Mix together mushroom mixture, lentils and rice. Top with fried onions and potatoes and garnish with coriander.
