Minty Date, Falafel, Feta and Rice Salad

1⁄2 cup chopped fresh dates
Zest and juice of 1 orange
Zest and juice of 1 lemon
2 cups cooked Spekko Saman Brown Rice
2 large carrots, spiralised
300 g mixed rocket and baby spinach leaves
75 ml coarsely shredded fresh mint leaves
3 Tbsp olive oil
Salt and pepper to taste
250 g frozen or pre-cooked falafel - prepared
200 g feta cheese, crumbled
Extra mint leaves for garnish
1. Mix the dates, orange and lemon juice and zest and soak for 5 minutes.
2. Mix the date and lemon juice with the rice, carrots, salad leaves, mint, and olive oil. Season.
3. To serve, set the rice in a salad platter, Top with the falafel, feta cheese and extra mint.
