MasterChef prawn curry
Deena Naidoo, MasterChef SA season 1, won a challenge stage in the competition with this recipe. Spekko India Gate Classic Basmati Rice is the perfect accompaniment.
Ingredients
- oil
- 1 large onion, finely chopped
- 1 green chilli
- 15 ml (1 tbsp) garlic and ginger paste
- ½ tsp ground cumin
- ½ tsp ground coriander
- 5 ml (1 tsp) turmeric
- 1 sprig curry leaves
- 6 medium-sized jam tomatoes, peeled and pureed
- 500 g prawns, shelled and deveined with tails intact
- 500ml (2 cups) cooked Spekko India Gate Classic Basmati Rice
- fresh coriander leaves
- 30-45 ml (2-3 tbsp) chilli powder
Method
- Stir-fry the onion, curry leaves and chillies in a little heated oil until the onion is golden brown. Stir in the ginger and garlic paste.
- Add the cumin, coriander, turmeric, chilli powder, curry leaves and tomatoes. Braise for a few minutes, turn heat down and simmer the tomatoes are fragrant.
- Add the prawns. Cover and simmer for another 5 – 7 minutes or until the prawns are just done.
- Season with salt and sprinkle with fresh coriander leaves. Serve with Spekko India Gate Classic Basmati Rice
