Lunchbox banana, raisin and rice muffins
Kids love these muffins.
Ingredients
250 ml (1 cup) cake flour
250 ml (1 cup) whole wheat flour
60 m (4 tbsp) brown sugar
60 ml (4 tbsp) raisins or sultanas
10 ml (2 tsp) baking powder
½ tsp salt
250 ml (1 cup) cooked Spekko Long Grain Parboiled Rice
3 eggs
375 ml (1 ½ cups) milk
125 ml (½ cup) melted butter
1 mashed banana or grated apple
Method
1.Heat oven to 200 ºC.
2.Combine dry ingredients, rice and dried fruit in a deep mixing bowl.
3.Beat eggs and milk, add melted butter, and add to dry ingredients. Mix until just combined.
4.Add fresh fruit.
5.Butter a 12 unit muffin pan, divide muffin dough and bake in a preheated oven, set for 200 degrees C for 25 minutes. Cool on a wire rack.
