Japanese-Style Tuna Mayonnaise Onigirazu

Onigirazu are Japanese sandwiches made with rice, nori sheets and with a seafood or fresh vegetable filling.

4 nori sheets

2 cups cooked Spekko Royal Umbrella Jasmine Rice

1 Tbsp rice vinegar

1 tsp sugar

1⁄2 tsp salt

For the filling

185 g can tuna in brine, drained

2 Tbsp Kewpie mayonnaise

2 tsp sriracha

1 avocado, peeled and thinly sliced

1 cucumber/4 mini cucumbers

4 spring onions, finely chopped

1. First make the filling: mix the tuna with the mayonnaise and sriracha.

2. Mix the rice vinegar, sugar and salt together, then add this to the cooked rice. Mix well.

3. On a flat surface, spread out some plastic wrap. Set a nori sheet on top, shiny side down. Spread 1⁄2 cup of rice in the middle of the nori sheet in a circular shape.

4. Add a layer of the tuna mayonnaise mix, then a layer of avocado, cucumber and chopped spring onions. Top with another 1⁄2 cup of rice.

5. Make a parcel by bringing two opposite corners of the nori together, covering the sandwich. Bring the other two corners together on top, making a parcel. Cover the sandwich with plastic wrap, and repeat with the remaining ingredients.

6. To serve, unwrap the sandwiches and slice them in two. Serve with sriracha sauce and extra mayonnaise.
