Hope Malau’s brown rice salad
A crunchy, garlicky and delicious salad. Good enough to eat as a meal on its own. Hope Malau, Drum food editor prepared this salad at a GF & WS for Spekko.
Ingredients
15 ml (1 tbsp) olive oil
15 ml (1 tbsp) balsamic vinegar
salt and black pepper
3 Cloves garlic, crushed
For the salad
375 ml (1 ½ cups) cooked Spekko Saman Brown Rice
1 Yellow pepper, diced
½ Red onion, finely chopped
2 Celery stalks, chopped
½ Cucumber, slices
100 g red cherry tomatoes, quartered
handful coriander, chopped
Method
1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and garlic. Set aside.
2. Place the brown rice, yellow pepper, red onion, celery, cucumber, cherry tomatoes, and coriander in a medium bowl. Add the dressing, and toss well to combine. Transfer to a serving bowl.
