Herb and Mushroom Rice
Serve with roast meat or as a side with the braai.
Ingredients
15 ml (1 tbsp) olive oil
15 ml (1 tbsp) butter
1/2 onion, chopped
1 – 2 celery ribs, sliced
125 ml (1/2 cup) sliced fresh mushrooms
1/2 tsp salt
1/4 tsp pepper
30 ml (2 tbsp) mixed finely chopped fresh herbs such as basil, oregano, parsley, thyme, or and/ or lemon thyme
15 ml (1 tsp) dried rosemary
250 ml (1 cup) cooked Spekko Long Grain Parboiled Rice
Method
1.Heat the oil and butter over medium heat in a large frying pan. Add the onion and fry for 3 minutes.
2.Add the celery, mushrooms, salt, and pepper. Cook and stir for 1 minute more or until the vegetables are tender. Remove the frying pan from heat. Stir in cooked rice, fresh herbs, and rosemary just until combined.
3.Mix with the cooked Spekko Rice and serve.
