Green prawn rice (Quick prawn and herb rice)
This makes a quick meal for unexpected guests if you have prawn meat in your freezer and Spekko Rice in your store cupboard. A fabulous and festive way to use leftover rice.
Ingredients
- 100 ml butter
- 4 cloves of garlic, crushed
- 4 spring onions with leaves, chopped
- 1 large green chilli, chopped
- 500 g prawn meat
- juice and grated rind of 1 lemon
- 125 ml (½ cup) chopped dill
- 125 ml (½ cup) chopped coriander
- 30 ml (2 tbsp) chopped fresh parsley
- 500 ml (2 cups) cooked Spekko Long Grain Parboiled Rice
- salt and freshly ground black pepper to taste
Method
- Heat butter in a large frying pan until foamy and add garlic, spring onions and chilli and fry for 1 minute.
- Stir in prawns and cook for 1 minute, then add lemon juice and rind. Stir in half the herbs and cook for 2 minutes.
- Stir in Spekko Long Grain Rice, season to taste and allow to heat through. Stir in remaining herbs and serve with extra lemon wedges and a large green salad.
