1,5 – 2 kg large prawns
90 ml (6 tbsp) butter
1 red chilli, seeds removed and chopped finely
3 garlic cloves, crushed
2 lemons, cut into wedges
4 cups cooked Spekko Long Grain Parboiled Rice
salt and freshly ground black pepper to taste
- Remove the veins from the prawns, but keep the heads and tails intact. Rinse well under running cold water, then dry with paper towels.
- Melt the butter in a large pan and add the chilli and garlic. Add the prawns in batches and cook on high heat for about 3 – 5 minutes until just pink.
- Season and serve immediately on Spekko Rice
