Fragrant yellow rice with raisins
Sweet and fragrant rice to serve with bobotie.
Ingredients
- 350 ml Spekko Long Grain Parboiled Rice
- 2 litre (4 cups) cold water
- 7,5 ml turmeric
- 10 ml (2 tsp) coarse salt
- 1 cinnamon stick
- 125 ml (1/2 cup) seedless raisins
Method
- Soak the Spekko Long Grain Parboiled Rice in cold water for 30 minutes. Rinse the rice under cold running water.
- Place the rice in a large pot with cold water, turmeric, coarse salt and cinnamon stick. Bring to the boil and simmer until the rice is tender. Add more boiling water if necessary to prevent the rice from becoming sticky.
- Strain the cooked rice into a strainer and pour 200 ml cold water over to stop the cooking process.
- Leave to drain for 5 minutes.
- Place the rice back in the pot, stir through the raisins and cover with a tightfitting lid, until ready to serve.
