Fig and rice cake
An easy cake to bake with just 6 ingredients.
Ingredients
- 250 ml (1 cup) Spekko Saman White Rice
- 250 ml (1 cup) milk
- 500ml (2 cups) cream
- 1/3 cup brown sugar
- 6 large eggs
- 20 small figs or 3 x 410 g cans figs, drained
Method
- Preheat the oven to 180º C and position a rack in the middle. Line a square 24cm cake tin with baking paper.
- In a large saucepan, bring the rice, milk and half the cream to a boil. Turn the heat down to a simmer, cover and let cook until all the liquid has been absorbed. Set aside to cool slightly.
- In a large bowl, mix together the remaining cream, brown sugar and the eggs until well blended. Add the rice and mixed stir until well incorporated. Pour the batter into the prepared baking dish.
- Cut the figs in half and arrange them on the cake. Bake for about 30 to 40 minutes until the top is golden brown.
- This cake is delicious served with a caramel sauce and cream.
