Easy Salmon Nigiri
Nigiris are beautifully crafted Japanese rice snacks. They are hand-formed, small, rectangular blocks of rice, topped with a slice of fish, seafood, or an alternate ingredient. With Spekko you can of course imagine up anything you like!

1 cup Spekko Saman White Rice
2 Tbsp rice vinegar
1 tsp sugar
1⁄2 tsp salt
1-2 nori sheets
Kewpie mayonnaise
1⁄4 avocado, peeled and thinly sliced
50 g smoked salmon
Pickled ginger
Wasabi
Toasted sesame seeds
Fresh edible flowers
Serve with a pickled soy cucumber salad on the side.
Cook the Saman White Rice as per package instructions, overcooking it slightly.
While that’s cooking, whisk the rice vinegar, sugar and salt together.
Once the rice has finished cooking, gently stir the rice vinegar mixture into the rice. Refrigerate to cool completely.
Wet your hands to prevent sticking. Divide the rice into 12 equal portions, shaping them into oval, nigiri-shaped balls.
Slice the nori sheet into 10 x 1.5cm rectangles. Wrap a nori piece around each nigiri, using a dab of water to stick it down.
Top each with a dot of kewpie mayonnaise, a slice of avocado, a slice of smoked salmon, pickled ginger, a dot of wasabi, sesame seeds and fresh edible flower petals for garnish.
Serve with a pickled soya cucumber salad.
