Crispy Sushi Bites in the Airfryer
An absolutely great recipe to prepare in your Airfryer. Top these crispy rice cakes with any topping of your choice.

2 cups Spekko Long Grain White Rice
¼ cup rice vinegar
2 Tbsp caster sugar
1 tsp roasted sesame oil
150 g sushi grade salmon or tuna, finely chopped
1 ripe avocado, diced
2 Tbs sesame seeds toasted
Lemon juice to serve
For the Sauce
¼ cup kewpie mayonnaise
1 Tbsp Sriracha
2 tsp rice vinegar
2 tsp soy sauce
2 tsp sesame oil
Cook the Spekko white rice according to the package instructions.
Whisk together the rice vinegar, caster sugar and sesame oil. Pour this over the cooked rice and mix until evenly distributed.
Line a brownie pan or baking tray with plastic wrap and press the rice into the pan using wet hands. Make sure it’s packed relatively tight. Cover and refrigerate for an hour.
When the rice has chilled and set, cut into rectangles about 5 cm x 4 cm.
Preheat the air fryer to 200 degrees. Spray your basket with spray and cook and place the rice pieces in spaced evenly.
Cook for 8 minutes each side until crispy and golden brown.
Meanwhile whisk together all the sauce ingredients in a bowl. Add your salmon or tuna and mix until evenly coated.
Serve your crispy rice bites with a heap of the salmon, some fresh diced avocado, toasted sesame seeds and a squeeze of fresh lemon.
