Creamy Rice Porridge with Milk and Sugar
This rice porridge is gluten free and totally delicious. Makes for comfort eating too!
Ingredients
2 cups leftover cooked rice, preferably Spekko Saman White Rice
2 cups milk
15 ml (1 tbsp) butter
Milk or cream to serve
Brown sugar to serve
Method
1. Mix the rice and milk in a heavy-bottomed pot. Heat slowly, then bring to the boil.
2. Add the butter, lower the heat and simmer very slowly until the milk has evaporated.
3. Serve warm with cream or milk and add brown sugar to taste.
This porridge makes the perfect base for a range of toppings – so get creative! Some of our favourite additions are nuts, dried fruits and spices like cinnamon in colder weather. Go for a classic sweet-and-savoury combo like bacon and maple syrup. Or add a boost of energy with banana, honey and peanut-butter. Have fun playing with different flavours!
