Chicken Brown Rice Bowls with a Ginger and Lime Dressing

3 cups Spekko Saman Brown Rice
6 Tbsp rice vinegar
4 shop-bought chicken schnitzels
For the dressing
1⁄4 cup olive oilJuice and zest of 1 lime
2 Tbsp soy sauce
2 Tbsp freshly grated ginger
2 Tbsp mixed black and white sesame seeds, toasted
To serve
2 avocados, sliced
125 g tenderstem broccoli, steamed
Fresh coriander leaves
Lime wedges
Cook the brown rice as per the directions on the pack. Set aside in a bowl to cool.
Add the rice vinegar to the rice and mix.
Make the dressing by combining all the ingredients, shaking to form an emulsion.
Cook the schnitzels as per the instructions on the pack.
To serve, divide the brown rice mixture between 4 bowls. Slice the schnitzels and arrange on top. Arrange the avocado, broccoli spears and coriander over the rice.
Pour the salad dressing over each helping, keeping some to serve on the side. Place a lime wedge on each.
