Chicken And Rice Koftas with Hummus
These koftas have a certain Mediterranean flair – the sort of dish you can eat in a taverna on a Greek island.

500 g chicken mince
1 cup cooked Spekko Saman Brown Rice
1⁄2 onion, grated
2 garlic cloves, crushed
3 Tbsp chopped broad leaf parsley
1 cup grated Parmesan or other hard cheese
Salt and pepper to taste

Fresh salad - rainbow slaw, red onion, mint, parsley, shaved cucumber and fresh

Preheat the airfryer to 180◦C.
In a large mixing bowl, mix together the chicken mince, Spekko Rice, onion, garlic, parsley and seasoning.
Using a small ice cream scoop, scoop spoonfuls of the mixture and form oval balls into skewers. Lightly spray or drizzle over some olive oil.
Cook the koftas in the airfryer for 8 – 10 minutes, until cooked.
Smear the hummus on a plate, top with the koftas, a fresh salad to the side, and squeeze over some lemon juice. Serve the extra hummus on the side.
