Chicken And Rice Koftas with Hummus

These koftas have a certain Mediterranean flair – the sort of dish you can eat in a taverna on a Greek island.

500 g chicken mince
1 cup cooked Spekko Saman Brown Rice
1⁄2 onion, grated
2 garlic cloves, crushed
3 Tbsp chopped broad leaf parsley
1 cup grated Parmesan or other hard cheese
Salt and pepper to taste
Olive oil

To serve
Hummus
Fresh salad - rainbow slaw, red onion, mint, parsley, shaved cucumber and fresh
chilli

  1. Preheat the airfryer to 180◦C.

  2. In a large mixing bowl, mix together the chicken mince, Spekko Rice, onion, garlic, parsley and seasoning.

  3. Using a small ice cream scoop, scoop spoonfuls of the mixture and form oval balls into skewers. Lightly spray or drizzle over some olive oil.

  4. Cook the koftas in the airfryer for 8 – 10 minutes, until cooked.

  5. Smear the hummus on a plate, top with the koftas, a fresh salad to the side, and squeeze over some lemon juice. Serve the extra hummus on the side.
