Caffe Latte rice pudding
Make this dessert with leftover cooked rice.
Ingredients
2 cups cooked Spekko Saman White Rice
½ tsp cinnamon
½ espresso shot of coffee (about 2 tablespoons)
125 ml (½ cup) white sugar
mint leaves to garnish
cream to drizzle
Method
1.Combine all the ingredients in a saucepan over medium heat. Bring the mixture to the boil, all the while stirring occasionally.
2.Cover and reduce to a low heat. Cook until thick and creamy – about 5 to 7 minutes.
3.Top with some cream and a mint leaf.
