Cabbage dolmades with herbed rice and mince
A budget friendly family meal.
Ingredients
250 ml (1 cup) Spekko India Gate Classic Basmati Rice
50 ml butter, melted
45 ml (3 tbsp) chopped parsley
45 ml (3 tbsp) chopped chives
15 ml (1 tbsp) olive oil
1 small onion, chopped
200 g lean beef mince
1 x 50 g sachet tomato paste
250 ml (1 cup) beef stock
60 ml (¼ cup) chutney
6 large cabbage leaves
salt and freshly ground black pepper to taste
Method
1.Cook Spekko India Gate Classic Basmati Rice according to the instructions on the pack.. Drain and keep warm.
2.Pour melted butter over rice. Stir in the herbs and season to taste with salt and pepper.
3.Heat oil in a pot and sauté onions, add mince and sauté until golden brown, breaking up any large pieces. Add tomato paste and stir through.
4.Add stock and chutney and stir well. Simmer for 5 minutes or until the meat is cooked and season to taste.
5.Blanch cabbage leaves in boiling water for a few seconds and run under cold water. Take care not to break or tear the leaves.
6.Mix rice and beef together and season to taste. Divide mixture amongst cabbage leaves and spoon into the centre of each leaf. Fold one edge over the filling, tuck in and fold the sides towards the middle. Gently roll up to form a parcel and serve immediately.
