Brown rice and sundried tomato salad with fresh baby tomatoes, olives and red onions
This salad takes less than half an hour to prepare and can be served as a side dish with a roast or braai.
Ingredients
- 625 ml (2½ cups) Spekko Saman Brown Rice
- 250 ml (1 cup) marinated sundried tomatoes, sliced
- 1 red onion, thinly sliced
- 200 g pitted black olives
- 250 ml (1 cup) coarsely chopped Italian parsley
- salt and freshly ground black pepper to taste
- juice of 3 lemons
Method
- Cook Spekko Saman Brown Rice with salt according to the instructions on the pack. Drain well and allow to cool.
- Stir the remaining ingredients into the rice and season to taste with salt and pepper.
