Brown Rice and Feta Fritters with a Pistachio Nut Crust
Incredibly "more-ish†fritters. These snacks make ideal lunchbox fillers.
Ingredients
1 red onion, chopped
3 cloves of garlic, crushed
2,5 ml (½ tsp) nutmeg
2-3 slices feta cheese
100 ml chopped mint
100 g pistachio nuts, coarsely chopped
3-4 large eggs, lightly beaten
875 ml (3½ cups)cooked Spekko Saman Brown Rice
salt and freshly ground black pepper to taste
375 ml (1½ cups)breadcrumbs
500 ml (2 cups) cake flour
juice of 3 lemons
olive oil to fry
Method
1.Heat a thin layer of oil in a frying pan and sauté onion and garlic. Allow to cool and add lemon juice, nutmeg and feta, mix together.
2.Add this mixture to Spekko Brown Rice and blend with mint in a food processor. Season to taste and form into little patties.
3.Mix breadcrumbs and nuts and place on a plate. Coat each patty in flour, then in egg and then in the breadcrumb mixture.
4.Heat a thin layer of oil in a hot pan and fry patties on both sides until golden brown. Serve as a snack or a light vegetarian meal with a dipping sauce of your choice.
