Broccoli Rice Fritters with Lemon Crème Fraiche
Ingredients
½ cups Spekko Parboiled Rice, rinsed
2 cups water
Salt
2 medium heads broccoli
3 eggs
5 Tbsp flour
1 tsp garlic powder
½ tsp chilli flakes (optional)
1/3 cup grated mozzarella cheese
85 g feta cheese, crumbled

Ground black pepper
Olive oil
250 g crème fraiche
2 Tbsp lemon juice
Zest of 1 lemon
1 Tbsp chopped dill

Method
- Put the rice & water into a pot with a pinch of salt. Bring to a boil, lower the heat & simmer for 20-25 minutes until cooked. Strain off the excess water.
- Steam the broccoli in the microwave or in a pot until cooked. Allow to drain & cool, pat dry as much as possible. Then chop into small pieces, stems included.
- Put the broccoli into a large bowl with the rice, eggs, flour, garlic powder, chilli flakes, mozzarella, feta & a pinch of salt & pepper. Mix well & roll into golf sized balls.
- Drizzle some olive oil in pan over medium heat & cook the broccoli balls, pressing together to create little fritters. You may need to cook them in batches. Fry for about 5 minutes per side, until golden & cooked through.
- For the crème fraiche dip, mix all the ingredients & season to taste with salt & pepper.
