Broccoli, cauliflower and cashew nut brown rice stir-fry
A stir-fried vegetarian rice dish which can be made using a combination of available vegetables.
Ingredients
- 45 ml (3 tbsp) olive oil
- 15 ml (1 tbsp) butter
- 1/2 medium onion, finely sliced
- 1 cinnamon stick
- 2 bay leaves
- 15 ml (1 tbsp) cumin seeds
- 2 whole cloves
- 250 ml (1 cup) chopped cauliflower
- 250 ml (1 cup) chopped broccoli
- ¼ cup roasted cashew nuts
- 15 ml (1 tbsp) soy sauce
- 500 ml (2 cups) cooked Spekko Saman Brown Rice
- salt and ground black pepper.
Method
- Heat olive oil and butter in a wok.
- Add the onion, cinnamon stick, bay leaves, cumin seeds and cloves and fry for 2-3 minutes.
- Add vegetables and soy sauce and stir fry for 2-3 minutes.
- Add cooked rice and cashew nuts then stir fry for a further 3-5 minutes.
- Season with salt and pepper to taste.
