Baked lemon rice pudding
It takes time, to cook, but this is such a delicious pudding, you will want to make it again and again. Just milk, rice, sugar and lemon makes it easy too.
Ingredients
- 60 ml (¼ cup) Spekko Long Grain Parboiled Rice
- grated rind of 1 lemon
- 25 ml (4 tsp) sugar
- 500 ml (2 cups) milk
- juice of 1 lemon
- cream to serve
- extra lemon rind to garnish
Method
- Preheat oven to 130 °C. Rinse Spekko Rice in cold water and drain.
- Mix rice, rind, sugar and milk in an ovenproof dish. Bake for 2½ hours, stirring every 45 minutes.
- Stir in lemon juice and add some more milk if necessary.
- Chill pudding well and serve with whipped cream and garnish with extra lemon rind.
