125 ml (1/2 cup) black olives, pitted, roughly chopped
125 ml (1/2 cup) bread crumbs
1/4 cup cornflake crumbs
1/4 cup cheddar cheese, grated
4 cups cooked Spekko Saman Brown Rice
salt and pepper to taste
Method
Preheat the oven to 180°C.
Spread 1 tablespoon of olive oil on the bottom of a baking dish, add white wine and place fish fillets on top. Sprinkle fish with salt and pepper
In a bowl mix together tomatoes, mixed herbs, onions, olives and 1 tablespoon of olive oil. Mix together well and spread over the fish. Bake for 20-25 minutes.
In a bowl mix together the breadcrumbs, cornflakes, cheddar cheese and the last tablespoon of olive oil. Mix well. Sprinkle mixture over the fish. Put oven on grill and grill for a few minutes until golden brown. Serve with warm Spekko Saman Brown Rice.
