Kokkedoor finalists strut their stuff
On Thursday 17 April the Kokkedoor finalists showed their skills at the annual agricultural show in Prince Albert. On the menu was pancakes, jaffels, coconut ice and boerewors rolls.
The ten teams, twenty “Onthoukokke” and ten “Kinkelkokke” came up with loads of recipes for food to “eat on the go”.
From Spekko Rice’s side, we thought to share a recipe that would challenge the Kokkedoor finalists’ efforts any time. Try our strawberry rice pancake recipe which will seduce any pancake fan.
Watch Kokkedoor this Thursdays at 8 pm on kykNET (DSTV Channel 144) when the teams will cook for the local tennis club. Nobody has as yet gone home in this reality cooking series. But who knows, maybe on Thursday someone may have to pack their pots and go home.
Herewith our Rice pancakes recipe with strawberries and cream:
Rice pancakes
Serves 4
- 1 cup cake flour
- 1 teaspoon baking powder
- 2 eggs
- 3 tablespoons castor sugar
- 1 tablespoon butter, melted
- 1 teaspoon vanilla essence
- 1 cup cooked Spekko Saman White Rice
- 1 – 2 cups milk
- 1 punnet fresh strawberries, hulled and sliced
- 2 oranges, juiced and zested
- 1 cup fresh cream
- Icing sugar
- 1 teaspoon vanilla essence
Cooking Method
1.In a blender, mix together flour, baking powder, eggs, castor sugar, melted butter and vanilla. Add cooked rice, adding enough milk to form a smooth batter that is the consistency of paint. Let the mixture rest for at least and hour.
2.Heat a non-stick pan over medium heat and grease lightly.
3.Place a spoon full of batter in the pan and cook on one side until bubbles form and burst.
4.Flip pancakes over and cook until golden brown.
5.Repeat with remaining batter.
6.In a saucepan heat the juice of the oranges along with the zest until it reduces by half and stir and sweeten if desired.
7.Remove from heat and stir in strawberries,
8.Sweeten cream to taste with icing sugar and vanilla and whip until soft peaks form.
9.Serve pancakes with strawberry sauce and cream.
