Fragrant chicken curry with lime leaves
Catering for a crowd has never been so easy or so delicious. Tumelo Sebopa, now food editor True Love, demonstrated this recipe at a Spekko event.
Ingredients
1/3 cup olive oil
3 onions, finely chopped
6 cardamom pods
4 whole cassia
15 ml (1 tbsp) cumin seeds
1, 5 kg chicken breasts, cubed
2 x 410 g cans chopped tomatoes
30 ml (2 tbsp) garlic paste
30 ml (2 tbsp) ginger paste
¼ cup masala
15 ml (1 tbs) coriander
4 lime leaves
6 cups cooked Spekko Long Grain Parboiled Rice
fresh coriander to serve
Method
1.In a large saucepan, heat oil and sauté onion, cardamom, cassia and cumin until onion is soft and translucent, and spices are fragrant.
2.Add chicken and gently stir-fry for about 5 minutes. Add tomatoes, garlic, ginger, masala, coriander and lime leaves, stirring until chicken is coated.
3.Reduce heat and simmer until chicken is tender. Season with salt and freshly ground pepper. Add coriander and serve with Spekko Long Grain Parboiled Rice.
