Curry and Rice Mzansi Style
It is easy to make this recipe in bulk. If you like, add a pinch of sugar to the mixture to offset the tart tomatoes.
Ingredients
30ml (2 tbsp) oil
1 Onion, finely chopped
1 Garlic clove, crushed
1 Green pepper, finely chopped
500 g beef mince
30 ml (2 tsp) mild curry powder
2 Chillies, deseeded and finely chopped
½ X 410 g can chopped tomatoes
Salt and pepper to taste
Fresh coriander for garnishing
4 – 6 cups cooked Spekko Long Grain Parboiled Rice to serve
Method
1. Heat oil and sauté the onion, garlic and green pepper until soft. Add curry powder and chillies.
2. Add mince, brow, then add the tomatoes. Simmer for 5 minutes.
3. Season with salt and pepper.
4. Serve on Spekko rice, garnished with finely chopped coriander.
