Bobotie Fritters
Musician Brenday Peyper loves these fritters. They are ideal for a quick snack or do add to a lunchbox feats.
Ingredients
For the rice
1 cup Spekko Long Grain Parboiled Rice
3 cups (750 ml) water
5 ml (1 tsp) turmeric
5 ml (1 tsp) salt
125 ml (1/2 cup) raisins
For the mince
oil for frying
1 onion, diced
2 cloves garlic, finely chopped
500 g lean beef mince
1 large carrot, grated
5 ml (1 tsp) each of ground coriander, ginger, curry powder, cinnamon, turmeric, salt
15 ml (1 tbsp) fruit chutney
50 g flaked almonds
For the fritters
6 ripe bananas
4 cups cooked turmeric rice
3 eggs, beaten
15 ml (1 tbsp) coconut flour
coconut oil to fry
To serve
fruit chutney
toasted coconut flakes
banana slices
fresh coriander
Method
1. First cook the rice. In a pot, mix the rice with the water, turmeric, salt and raisins. Bring to the boil then turn down the heat, cover and simmer for 30 minutes until cooked.
2. To prepare the mince, heat the oil in a pan on medium heat and fry the onion. When translucent, add the garlic, mince and carrot.
3. Add all the spices, chutney and almonds. Fry until the mince is cooked.
